It’s Sweetest Day, so I thought I’d make my husband a breakfast bake. His favorite meal of the day is breakfast, so this was perfect. I found a recipe on Betty Crocker‘s website.

Makes 12 servings

Ingredients:

  • 2 packages (12 oz each) bulk pork sausage
  • 1 medium bell pepper, chopped (1 cup)
  • 1 medium onion, chopped (1/2 cup)
  • 3 cups frozen hash brown potatoes
  • 2 cups shredded Cheddar cheese (8 oz)
  • 1 cup Original Bisquick® mix
  • 2 cups milk
  • 1/4 teaspoon pepper
  • 4 eggs

 Directions:

  1. Heat oven to 400°F. Grease rectangular baking dish, 13x9x2 inches. Cook sausage, bell pepper and onion in 10-inch skillet over medium heat, stirring occasionally, until sausage is no longer pink; drain. Stir together sausage mixture, potatoes and 1 1/2 cups of the cheese in baking dish.
  2. Stir Bisquick mix, milk, pepper and eggs until blended. Pour into baking dish.
  3. Bake uncovered 40 to 45 minutes or until knife inserted in center comes out clean. Sprinkle with remaining cheese. Bake 1 to 2 minutes longer or just until cheese is melted. Cool 5 minutes.

 

* If you’d rather make a smaller recipe using a 9-inch pie plate, cut all ingredient amounts in half and bake 30 to 35 minutes.

Sausage and egg casserole

It’s Friday night and I noticed some breakfast sausage links in the refrigerator that expire today. I decided to look around online for some inspiration. I found quite a few breakfast casserole recipes so I went with that and used what I had on hand. My husband loved the final dish, so I am sharing it with you.

Ingredients:

  • 9 slices of sandwich bread (crusts removed and cubed)
  • 12 oz breakfast sausage links (cooked and sliced)
  • 1 1/2 cups Mexican cheese shredded
  • 8 eggs, beaten
  • 2 cups milk
  • salt and pepper to taste

Directions:

  1. Spray a 9×13 dish with cooking spray and scatter the bread.
  2. Sprinkle with the sausage and cheese.
  3. Whisk eggs, milk, salt, and pepper and pour the mixture in the dish. Lightly press down to make sure all ingredients are wet with the egg mixture.
  4. Bake in a 325 F oven for 45 minutes. Cut and serve. Serves 6-8.
