Goblin Cookies

It’s almost Halloween. I saw a recipe on Pioneer Woman for monster cookies and thought they looked delicious. I’ve read that monster cookies are supposed to have peanut butter and you omit the flour. I altered the monster cookie recipe and changed the name to goblin cookies. All the little chips and M & M’s looks like spooky goblin eyes watching you!

  • 2 sticks unsalted butter, softened
  • 1/2 cup white sugar
  • 1 1/2 cup packed brown sugar
  • 2 large eggs
  • 1 tablespoon vanilla
  • 1 1/2 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 teaspoons kosher salt
  • 1/2 cup quick cook oats
  • 1 cup regular oats
  • 1 cup M & M’s
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup mini semi-sweet chocolate chips
  • 2-1/2 cups Rice Krispies

  1. Preheat oven to 375 degrees.
  2. Cream butter with sugars until fluffy. Add eggs one at a time, beating well after each addition. Add vanilla and beat.
  3. Add flour, baking soda, baking powder, and kosher salt to bowl and mix till combined. Next add in oats, followed by M & M’s and chocolate chips.
  4. Add Rice Krispies at the very end, mixing until just combined, being careful not to over mix.
  5. Use a cookie scoop to scoop heaping balls of dough onto a cookie sheet. Bake 12 minutes, then allow to cool on a rack.

Pie Things

I know, pie things, what an odd name for a recipe. My mom used to make these for us all the time during the holidays with leftover pie dough. We just ended up calling them pie things and the name stuck.

  • leftover pie dough
  • margarine
  • cinnamon
  • sugar

  1. Roll pie dough thinly
  2. Spread a layer of margarine over the dough.
  3. Sprinkle heavily with cinnamon and sugar.
  4. Roll the dough up to make a long log.
  5. Place on a baking sheet and every half inch cut almost through the dough.
  6. Put into a 450 degree oven for 10 minutes. Enjoy!

Cocoa Butter Balls

This is one of my favorite recipes from when I was a kid. Back in the 80’s I had a children’s cooking set called Now You’re Cooking.  This was my favorite recipe to make because it is easy and tastes so good.

  • 1/2 cup (1 stick) margarine
  • 1/2 cup brown sugar
  • 1/2 cup peanut butter (chunky or smooth)
  • 4 tablespoons unsweetened cocoa
  • 1 1/2 cups quick cooking oats

  1. Place margarine in a medium glass bowl and microwave on 50% power for 1 minute, or until melted.
  2. Add brown sugar, peanut butter, cocoa and stir until combined.
  3. Mix in all of the oats.
  4. Scoop out to make 16 balls and place on a baking sheet. Refrigerate until chilled and set.
