Italian Meatballs

This afternoon I made a big batch of meatballs. We had it for dinner and then I put the rest in the freezer for future meals. I did this last year right before I gave birth and it was an easy meal for us to have on hand.

2 pounds ground beef
2 beaten eggs
1/2 cup milk
1 cup plain bread crumbs
1/2 cup grated parmesan
1 tsp salt
1 tsp ground black pepper
2 tsp oregano
1 tsp garlic powder
1 tsp italian seasoning

Heat oven to 400 F
Place all ingredients in a large bowl. Mix with your hands until combined.
Use a cookie scoop to make balls. Place on a sheet pan covered in nonstick foil. Once all balls have been scooped roll each one in your hands to make perfect balls.
Bake meatballs for 20 minutes.
Serve with spaghetti and tomato sauce or cool and place in freezer bags for future use.

Swedish Meatballs

I love Swedish meatballs. I love the texture of them. The are almost fluffy and always taste delicious. I don’t remember where I found this recipes, but it has become a regular in our household. Easy to make and yummy to eat.
Sometimes if I have leftover mushrooms I’ll throw them in the sauce.

  • 6 pieces of wheat bread, toasted, crusts removed, and cubed
  • 3/4 cup half-and-half, divided
  • 1 egg, beaten
  • 1 lb. lean ground beef
  • 1/4 cup dry plain bread drumbs
  • 1 tablespoon grated onion
  • 1 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon pepper
  • 2 tablespoons oil
  • 1 12 oz. jar homestyle beef gravy

  1. Preheat oven to 350 degrees. Combine bread, 1/4 cup half and half, and the egg. Let soak 5 minutes. Mash bread mixture with a fork and add all remaining ingredients, except butter and gravy. Mix together and shape into mini meatballs, using cookie scoop.
  2. Pour oil in a nonstick saucepan over medium-high heat. Add meatballs, browning on all sides. Transfer finished meatballs to a covered baking dish. Toss meatballs in 1/4 cup of gravy, cover, and bake 20 minutes.
  3. Meanwhile, in a saucepan, over medium heat, combine remaining gravy and remaining 1/2 cup half-and-half. Bring just to a boil, then reduce heat to low and simmer, covered, for 10 minutes.
  4. Serve meatballs with creamy gravy and buttered egg noodles or mashed potatoes.

BBQ Meatballs

Here I go again, making more Pioneer Woman recipes. This one was a major hit with my husband. Made these meatballs this evening and gave my 6 month old son a bath while they baked in the oven.  The house smelled so good when we walked downstairs. My husband thinks these should be called meatloaf balls.

Ingredients for meatballs:

  • 1-1/2 pound ground beef
  • 3/4 cups oats
  • 1 cup milk
  • 3 tablespoons very finely minced onion
  • 1-1/2 teaspoon salt
  • ground black pepper, to taste

Items needed for browning meatballs:

  • 1 cup all-purpose flour
  • vegetable oil

Ingredients for sauce:

  • 1 cup ketchup
  • 2 tablespoons sugar
  • 3 tablespoons vinegar
  • 2 tablespoons worcestershire
  • 6 tablespoons finely minced onion
  • 1 dash hot sauce

  1. Preheat oven to 350 degrees.
  2. Combine all meatball ingredients. Roll into medium-small balls and place on a cookie sheet. Place sheet in freezer for five minutes.
  3. After 5 minutes, remove meatballs from freezer and immediately dredge in unseasoned flour.
  4. Brown meatballs in vegetable oil until just brown. Place into a 13 x 9 glass baking dish.
  5. Combine all sauce ingredients. Pour over meatballs and bake at 350 degrees for 40 minutes. Serve mashed potatoes.
